Bistro Nights Dec. 4th: Chef Chris Picek

Bistro Nights is back for Round 2 with Chef Christopher Picek! 

Christopher Picek is one of Calgary’s longest serving chefs.  Known to industry vets as alumni of classic local restaurants Capo, Il Sogno and Borgo.  He started cooking in his late teens and went on to study at SAIT Polytechnic.  His apprenticeship then took him to Vancouver’s Relais & Chateau Wedgewood Hotel.  From there he has spent years working his way through boutique hotels and restaurants in Vancouver, Banff, Canmore and the UK.

Chris is a chef who doesn’t stand on ostentatious or pretentious cooking.  Everything is ingredient-led and recognizable, yet exciting and sometimes unexpected.  His inspiration is always found in the local markets and gardens, joined to the culinary traditions of Italy, France and Spain.

Chris has been on the pop-up circuit in Calgary since 2020 with the Modus Vivendi project (“Way Of Living”).  At ODB you can expect some classic Modus dishes alongside some new creations, all focusing on the late autumn produce of Alberta and BC.

This dinner will be served Prix Fixe with the option of 4 or 6 courses.  Reserve your spot with a $10 deposit (4-Courses) or $15 (6-Courses) which will be credited to your bill the night of the dinner.

-Rabbit Terrine-

pickled roots & fruits, mustard vinaigrette 

-Butternut Squash Pave-

hot honey glaze, pecorino fondue & herb salad

 -Albacore Tuna Crudo-

fingerling potato salad, pickled shallots & smoked paprika aioli

-Matsutake Risotto-

vegetable stock, white wine, butter, Parm

 -Roast Duck breast-

winter vegetables, Bolognese fritter & bone jus

 -Almond & Olive Oil Cake-

almonds, cornmeal, olive oil, citrus, orange curd, fennel pollen & caramelized white chocolate 


4 Courses - $60 per person
 6 Courses - $80 per person
